Throughout his multi-decade spanning career he has been the driving force behind culinary behemoths such as MiCocina, Mesero, and Doce Mesas to name a few. Turning one restaurant in the 90s into a company of over 30 restaurants cemented Mico as a Dallas legend, and earned him the moniker 'the Godfather of Tex-Mex'.
